Understanding why gluten forms, why egg yolk changes a dough's structure, why starchy pasta water is the most valuable tool we have for binding a sauce — none of this takes anything away from the poetry of the gesture. If anything, it makes it more deliberate.Italian pasta cooking has a feature that sets it apart from many other culinary traditions: it is at once extremely rigorous and deeply regional, codified and endlessly variable. Bolognese tagliatelle and Apulian lagane come from different dough logics not by chance, but because they respond to different climates, available flours, uses of the dish, and preservation needs. There is, therefore, no single "correct" pasta: there are doughs that are coherent with the purpose they were designed for. And it is exactly this coherence — this cause-and-effect relationship between ingredient, gesture, and result — that is the subject of our inquiry.
